Welcome to Matador

Matador is a lively new Spanish tapas restaurant opening its doors in late August 2025 at 10 E Main Street, right in the heart of Carmel, Indiana. Brought to life by Chris Evans, founder of the beloved Sangiovese Ristorante, Matador brings bold flavors, warm hospitality, and a vibrant atmosphere to its beautiful corner restaurant.

The menu? Inspired by the traditions of Spain, it features shareable tapas and authentic dishes made for gathering. From crispy Patatas Bravas and classic Pan con Tomate to rich, saffron-scented Paella, each plate is designed to be savored with friends, family, and good conversation. Pair your meal with a flight of our signature house-made Sangrias, or sip from a carefully curated wine list and craft cocktail menu at our full bar.

The restaurant offers seating for 120 guests indoors, a private dining room for intimate celebrations, and an additional 50 seats outdoors for al fresco evenings along Main Street. Matador will serve as a welcoming location for all ages, bringing a savory and colorful social elegance paired with shareable crowd-pleasing experiences..

“We created Matador to be more than a restaurant,” says owner Chris Evans. “It’s a place where design, cuisine, and atmosphere come together to leave a lasting impression. We want our guests to feel refreshed, inspired, and connected after dining with us.”

Matador will be open seven days a week from 4 p.m. to 10 p.m. starting late August. Reservations are encouraged, and gift cards from the former Tre restaurant will be honored.
